An award-winning wine from Domaine de la Grande Séouve, who have established AIX as perhaps the definitive Provence rosé. A superb choice for any event, and the perfect match for canapés or seafood. This remarkably good dry rosé is made by Dutchman Eric T.A. Kurver who is living the dream in Provence. After a first career in his home country, he gambled on a 200-acre property and winery in a new country. Much to the consternation of the locals, he registered the name “Aix.” (Pronounced “X,” Aix is the capital of the region. They were annoyed that they didn’t think of it first!) Kurver is fanatical about the purity of his wine, beginning with the health of his grapes. He picks by hand in the middle of the night when it is coolest and the pulp is less likely to start oxidizing from the handling of the grapes. Unlike most wines, he adds no sulfites at the beginning of the process because he covers the grapes with inert argon gas from the minute they are put into the hopper until fermentation is well underway, protecting them from oxygen. This wine gets its pale color only from the pressure of grapes upon each other in the hopper; there is no skin contact. It is a beautiful, refined, and balanced rosé that will compete with the best.
