Clean and pure with low residual sugar. The citrusy drop opens with refreshing lemon and lime with nice weight on the palate due to extended time on lees. Grapes come from estate vineyards in the Waihopai and Wairau Valleys to provide a balanced flavor profile. Fermentation occurred over 4 weeks between 11 and 15 degrees Celsius using selected aromatic yeasts to contribute to texture and roundness. After blending, the wine was stabilized without the need for additional fining before filtration and bottling.
