All the rage on the hip wine lists, Petillant Naturel is a category of sparkling wines which, as the name would imply, is produced using minimal intervention. After fermentation is initiated by natural yeasts, the process is completed in the bottle. This in-bottle fermentation creates the bubbles. Since there is no fining for filtration, any byproducts, such as yeast particles and sediment, remain in the bottle, making for a cloudy, "natural" look. This version is on the cleaner, more approachable side with a lovely creamy texture and lightly nutty finish.
